ASOPEP Mill is located in Tolima, one of Colombia’s largest coffee producing regions, known for it’s clean, balanced flavour profiles. The coffee is produced by members of the ASOPEP Cooperative comprised of 175 coffee producing families who contribute their coffee cherries for processing and packing collectively at the mill onsite. The coffee is grown in volcanic ash and clay loam soils, using organic methods.

This example from the ASOPEP co-op is a washed process with a clean, balanced profile, bringing a big base of caramel and brown sugar, and raised lime acidity.
